Escalope of turkey ballotine with apricot and thyme stuffing and roasted roots


Ingredients

225g Turkey escalope

125g Sausage meat

25g Apricots

1 Bunch of thyme

1 Carrot

½ Celeriac

½ Swede

Olive oil

Salt and pepper


Method


1. Batten out the turkey escalopes between two sheets of cling film.


2. Add the sausage meat, thyme and apricots in a bowl and mix well with salt and pepper.


3. Place sausage meat filling in the centre of the escalope and roll up like a swissroll.


4. Place the escalope on buttered tinfoil and roll up like a Christmas cracker.


5. Cook in a pre-heated (180–190oC) for 10–15 mins, till firm to the touch.


6. Cut up all the root veg into half inch pieces.


7. Place roots in roasting tray with salt, pepper, olive oil and thyme and cook in a medium oven until tender.


8. Remove the turkey and slice over the roasted roots.
